Combine oats and liquid in a small saucepan and bring to boil over medium heat. Reduce heat to low, then let simmer until thick but not pasty - should take about 5 minutes.
Mash up the banana
Stir in the mashed banana, cinnamon and walnuts. Heat for just a minute or so, then spoon into serving bowls and top with brown sugar and a drizzle of cream. Makes 1 hearty serving.
Be sure to toast the chopped walnuts as it truly brings out their flavor. If you prefer something other than skim milk, by all means, then, use it as long as the water/milk combo measures 1 1/4 cups. I like to drizzle just a tiny bit of half and half over the oatmeal when serving to add some richness.
